Candied Pecans

Candied pecans just add a nice treat to a salad.  I mostly like them in fruit and lettuce salads.  You can make a batch and save them in your fridge for as you need/want them.

2 cups pecans
1 egg white (beat stiff - my hand mixer is dead, I improvised and used my magic bullet so I only was able to whip up a good white foam)
1/2 cup brown sugar
generous sprinkling of cinnamon
dash of vanilla

Preheat oven to 350 degrees. 
Place wax paper on a cookie sheet, spray wax paper with non-stick spray such as Pam.
Beat egg white, mix in brown sugar, cinnamon and vanilla.  Add pecans and stir until all the pecans are well coated.


Spread pecans on cookie sheet so they are not on top of each other.


Bake for 15 to 20 minutes.  Stir halfway through.

Cool.  Use in salads or other things that call for candied pecans.  Store in fridge.

  1. ooh yum. Sandi has a candied nut maker, but this seems like an easy, cheap and tasty alternative! I could just eat these as a snack :)
