Everyone may but we all make them just a little bit different. What brought me to write about them and share my recipe is because on Wednesday I received a text from Aimee asking what I put in my sloppy joes. I preceded to share with her as detailed as you can with a text what I put in my sloppy joes. And than decided to make them for dinner.<br />
<br />
Whenever I make sloppy joes I think of my brother Curtis. My "recipe" is from him. I don't even know what I used to make before. I just remember one time helping him prepare dinner and this is what we made and these are the ingredients he had me use and how to cook them.<br />
<br />
Ingredients: for 2 people (adjust according to how many you are serving)<br />
<br />
1/3 lb. ground beef<br />
1/4 yellow onion - diced as small as you like<br />
8 oz. tomatoe sauce<br />
garlic salt to taste - probably about 1/2 tsp.<br />
1 TBS yellow mustard<br />
1/4 to 1/2 cup of your favorite BBQ sauce (depending on how tangy you want it)<br />
1/4 to 1/2 cup of brown sugar (depending on how sweet you want it)<br />

That's all, I don't add catsup, Worcestershire sauce, vinegar, or other ingredients but I know some of you have a recipe that calls for those items.<br />
<br />
Directions:<br />
<br />
In a skillet break up your ground beef and add your onions. Cook/saute until the ground beef is thoroughly brown and the onions are transparent (this was the secret Curtis shared with me, if you cook the onions to transparency the flavor is just right and the little guys are not crunchy - so I think about Curtis while I am doing this). While you are cooking the ground beef, break it up with a spatula to little, little pieces (unless you like bite size chunks of ground beef in your sloppy joes)<br />

Add the rest of the ingredients; in the order listed. It probably doesn't matter that much what order but I would definitely do the tomato sauce first to have sauce to add the rest too. <br />

It was also a great year because I cooked so much and learned how to make so many new and delicious things! Last year I made the goal of trying at least one new recipe a week. And I think I was pretty successful too. I don’t know that I made exactly one new thing every week, but some weeks I made two, so that makes up for it, right? I decided to leave work a little early to make dinner for Aimee and I and wanted to have chicken be the meat of the meal since Aimee loves it. This is a pretty easy recipe we loved how it turned out- not to mention that it is extremely healthy.<br />
<br />
Cooking may seem daunting at first but you have to not be afraid to try new things and match flavors that you know will be good together. In order to match flavors you have to try tons and tons of new foods. For this recipe I didn't use any other recipe as a base and hadn't eaten anything <i>exactly </i>like this before, but knew the flavors of each ingredient and how they would compliment each other.<br />

Ingredients<br />
2 Chicken Breasts (whole, thawed)<br />
3 Cups Spinach (can be baby or regular, you will be steaming them and they will reduce in size dramatically. This measurement is before the spinach is cooked)<br />
1 Full-Size Can of Whole Black olives (You will need some of the liquid from this can and the pre-chopped olives tend to not have very much juice in the can)<br />
2 Teaspoons Olive Juice (<b>not </b>oil)<br />
1/4 Bar of Non-Fat cream cheese (you can use low-fat or regular if you prefer)
<br />
2 Teaspoons of Lemon Juice<br />
2 Teaspoons Onion Salt<br />
2 Teaspoons of Kirkland Sweet Mesquite Seasoning (I haven't been to a <a href="http://ecx.images-amazon.com/images/I/4189CmYsSSL._SL500_AA300_.jpg">Costco that doesn't have this stuff </a>and its GREAT for poultry and pork recipes)<br />
2 Teaspoons Corn Starch (for sauce thickening)<br />
1 Teaspoon Mustard Powder<br />
1/4 Cup water<br />
1 Teaspoon Salt<br />
<br />
Optional and recommended- steamed broccoli as a side<br />
<br />
<br />
Whew! That's a lot of ingredients, right? Don't worry this recipe is easier than the ingredients make it appear and it's a delicious dish.<br />
<br />
Lets begin!<br />
<br />
Now the key to making this recipe is having things cooking simultaneously- while this is not necessary multi-tasking will save you time. <br />
<br />
Start steaming the spinach (5-6 minutes is perfect, when that time is up put the cooked spinach in a colander and let them drip excess liquid out). In a small saucepan add the water, mesquite seasoning, and 1 teaspoon of the lemon juice (the other teaspoon will be added to the filling for the chicken later) and simmer on high for 5-6 minutes (yep, the same amount of time as the spinach). Once you hit the 4-5 minute mark add the corn starch. This is the sauce that you will spread on top of the chicken breasts so you want it thick enough that it will not just run off of the sides.<br />
<br />
You have 5-6 minutes while your spinach cooks and your sauce simmers- lets get the chicken ready. Lay down some parchment paper on the counter and pound the chicken a few times with a large flat pan. The goal is just to flatten it out slightly and even out the thickness. It doesn't need to be paper thin- just thin enough that we can fold it in half on itself and it wont open up on its own.<br />
<br />
Now take that drained spinach and chop it on a cutting board until the pieces are about the size of your thumbnails or smaller. Take the olives and chop them to about the size of your pinky nail or smaller. In another saucepan place the spinach, cream cheese, 1 teaspoon of lemon juice, onion salt, mustard powder, olive juice, and olives on medium-low heat. The cream cheese will melt and it should only take 2-3 minutes before you have the stuffing for the chicken all done.<br />
<br />
Alright- the hard parts are over. Take your chicken breasts and place them with the smooth sides down on aluminum foil squares that will be large enough to completely wrap them. Spread the spinach and olive sauce over the side of the chicken breasts that are facing the ceiling (not touching the foil). Fold them each in half and wrap them individually in the foil. Leave a small opening in the top of the foil to let some of the moisture escape. Now take the sweet lemon and mesquite sauce and spread it over the top of each breast. The purpose of the aluminum foil is to make sure that the delicious filling doesn't run all over the place when it gets hot. Don't worry-the sauce will stay in the middle when you finish cooking and remove them from the foil.<br />
<br />
Bake at 375 for 15-20 minutes. If you have a food thermometer now is the time to use it. The chicken will cook faster because it has been pounded and is not as thick as a whole chicken breast as well as being inside of aluminum foil.<br />

This pie was passed on from my Grandmother Reed to my mom Karma to me. I love it. It is probably my favorite pie and as far as I am concerned no one has a better lemon meringue recipe, but I might be a bit bias. As delicious as I believe this pie to be, it is not a favorite of my children. So although it is a family recipe it will be shared here so it is not lost even though it will not be passed to the next generation. <br />
<u>Grandma Esther Reed's Lemon Meringue Pie</u><br />
<br />
Ingredients:<br />

<i>Pie Filling</i><br />
1 cup sugar<br />
1 1/4 cups water<br />
1 Tbs. butter<br />
1/4 cup cornstarch<br />
3 Tbs. cold water<br />
6 Tbs. lemon juice<br />
3 egg yolks<br />
2 Tbs. milk<br />
1 8 in baked pie crust <br />
<br />
<i>Meringue</i><br />
3 egg whites<br />
6 Tbs. white sugar<br />
1 tsp. lemon juice<br />
<br />
<u>Directions</u><br />
<br />
1.First off a disclaimer, I purchase Pillsbury ready to roll out and bake pie crust. I have never made a good flaky pie crust and I like Pillsbury's. So bake a 8 inch pie crust, whether you use Pillsbury or your own recipe you can choose. Let cool.<br />
<br />
This next part is what I do know how to do.<br />
<br />
<i>For Pie</i><br />
2. In a large pot; combine sugar, water and butter.<br />
3. Cook until sugar is dissolved, stirring regularly. <br />
4. Blend cornstarch with the cold water until the cornstarch is all dissolved.<br />
5. Slowly pour into sugar/water mixture - stirring while adding. <br />
6. Cook slowly until mixture is clear about 8 minutes.<br />
7. It will be clearer but not see through.<br />
8. Add lemon juice and cook 2 more minutes.<br />
9. Beat eggs yolks with milk and then slowly add to sugar/lemon mixture.<br />
10. Bring to a boil.<br />
11. Cool slightly and than pour into cooled pie crust.<br />
12. Let set.<br />
<br />
<i>For Meringue</i><br />
<br />
13. Preheat oven to 350 degrees.<br />
14. Beat egg whites until stiff but not dry.<br />
15. Add sugar gradually and beat a little more.<br />
16. Add lemon juice and beat slightly.<br />
17. Spread over cooled filling, shaping with peaks.<br />
18. Brown in oven for about 13 to 15 minutes.<br />

What dessert or treat do you have to have for Christmas? For me, my dad's famous toffee reminds me of Christmas so much. Christmas caroling to friends and family especially, while sharing with them his delicious buttery toffee. My dad has simply <b>perfected</b> toffee making, and he recently shared his recipe and tips with me. But I was a bit intimidated, and still am in fact. I know how many years it has taken him to get this recipe just right, and I know that even with his expertise he has undercooked or overcooked the toffee. I know that new candy thermometers and new pots changed the length of cooking time. I know that moving to California with the change in altitude changed the recipe complete.y And I'm scared to pieces to try it for myself. So, even though I <b>really </b>want to share this recipe with you, its not time for that yet, because I can't exactly share a recipe that I haven't made, now can I? Another thing that has always intimidated me is fudge. I never grew up with my mom making fudge because she always complained that it wouldn't turn out. It would be too grainy, or overcooked, or who knows what else. So until this week I had only made <a href="http://likemother-likedaughter-food.blogspot.com/2010/09/3-minute-fudge.html" target="_blank">microwave fudge</a>, but <a href="http://www.bakerella.com/peanut-butter-fudge/" target="_blank">this recipe</a> looked way too good to pass up. And we needed something to share with our new neighbors. So I decided to try it. And it turned out perfect. I'm sorry to say that I didn't really change the recipe at all (okay, except for using crunchy peanut butter instead of creamy, milk chocolate instead of semi sweet, and a little more vanilla). But its too delicious not to share with you anyway.<br />

1 1/2 cups sugar<br />
6 TBS margarine<br />

1. Combine 1 1/2 cups sugar, 6 TBS margarine and 1/3 cup evaporated milk in a medium pot, over medium high.<br />
2. Bring to a full rolling boil, stirring often.<br />
3. Boil for about 1 minute.<br />
4. Lower the heat to medium and continue to boil for another 3 minutes, stirring constantly.<br />
5. Remove from heat and stir in chocolate chips, until melted.<br />
6. Add half of the jar of marshmallow creme and 1 tsp vanilla.<br />
7. Stir until well blended.<br />
8. Pour into a greased 13x9 pan.<br />
9. Repeat steps 1-7, replacing chocolate chips with peanut butter.<br />
10. Spread peanut butter mixture over chocolate.<br />
11. Cool completely, at room temperature.<br />
12. Cut into squares and <i>enjoy</i>.<br />

During the year of 2008, I spent the months of September through December in Vienna, Austria (and a little bit elsewhere) living with an amazing Austrian family, learning the German language and learning about Austrian culture. I loved being there so much that I am always missing all of it with a little bit of my heart and I'm <a href="http://blahblahberrett.blogspot.com/2011/08/travel-bug.html">constantly</a> trying to find ways to go back.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="" style="clear: both; text-align: center;">Anyway, one of my many favorite memories while I was there was staying in the cutest little city called <a href="http://maps.google.com/maps?q=dorfgastein&um=1&ie=UTF-8&hl=en&sa=N&tab=wl" target="_blank">Dorfgastein</a>. Now for me, Dorfgastein is the quintessential essence of Austria. We got to hike through the snowy alps while we were there (mind you I didn't bring any hiking boots to Austria), watch some boys play fussball, eat breakfast in a little mountain cabin, and much more.<br />

And although I am not catholic (read about my religion <a href="http://mormon.org/" target="_blank">here</a>) and my German was pretty pathetic, I could still feel a spirit there, and it was an amazing experience. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="" style="clear: both; text-align: center;">And for our thanksgiving dinner we were fed traditional Austrian Wiener Schnitzel. I think it was veal. But it was delicious. And since then schnitzel has always had a special place in my heart (or my stomach?) and I made it with a couple friends once when we got back to Utah, but my dear honey husband never tried it before, so finally I decided I needed to make it for him. And I used an Austrian cook book that was purchased in Vienna. And so this recipe is pure Austrian goodness. </div><div class="separator" style="clear: both; text-align: center;"><br />

<br />
4 veal, pork or chicken cutlets (I used pork, but veal is the most common)<br />
6 TBS flour<br />
1 TBS salt<br />
1 tsp pepper<br />
3 eggs<br />
1/2 cup italian bread crumbs<br />
1 cup panko<br />
vegetable oil<br />
1 lemon<br />
<br />
1. In a shallow large pan put about 1 inch of oil, and heat over medium low.<br />
2. Beat each cutlet using a meat tenderizer or a heavy flat pan, between 2 pieces of plastic wrap until cutlets are about 1/4 inch thick.<br />
3. Rinse the cutlets under cold water.<br />
4. Dry with a paper towel.<br />
5. Mix the flour with the salt and pepper in a small bowl.<br />
6. Dip each cutlet into the flour mixture and cover completely.<br />
7. In another bowl beat eggs.<br />
8. In a third bowl combing Italian and Panko bread crumbs.<br />
9. Dip each cutlet in the eggs and then cover in the bread crumbs.<br />
10. Fry each cutlet in the oil for about 3 minutes on each side, until the breadcrumbs turn a golden brown color.<br />
11. Cut lemon into wedges.<br />
12. Serve each schnitzel with a lemon wedge.<br />
13. Squeeze lemon juice over schnitzel and enjoy.**<br />

I've always had trouble making decisions when it will affect other people, (ie. where we should go out to eat in the first place). I think this is because I don't want to choose something that someone else won't enjoy, its like their opinion is much more important than mine. But choosing the food that I want to eat doesn't really affect anyone but me. So you would think that this wouldn't be a hard thing for me. But somehow it still is. <br />

I'm not really sure where my problem began with making decisions, but I know its always been something I've struggled with. I never want(ed) to choose something and then find out later that something else would have been a better choice. In 5th grade I had a teacher that tried to help all his students with this problem, of making decisions. Instead of answering "I don't know" or "I don't care" or "It doesn't matter", he <i>made </i>us answer the questions and make a decision. And during that year I got really good at making decisions (like its some sort of skill?) and the following year I was still good at making decisions. But somewhere along the way I lost this skill, and it became difficult for me to make decisions again.<br />

So, sometimes when we go out to eat I like to order the appetizer sampler platter, as my meal. I mean its perfect, 3 or 4 delicious appetizers to eat, and that way I don't feel like I'm missing out on some flavor, I can have a little bit of everything. And one of my favorite things that they usually have on these sampler platters are mozzarella sticks.<br />

And now with thanks to <a href="http://pinterest.com/pin/132293307773671158/">Pinterest</a>, I have discovered that they are so easy to make from home. And this discovery might actually be pretty dangerous for me, and maybe for you too. But they are delicious, and gooey, and scrumptious, and perfect. Don't just trust me, this is one you'll <b>have to</b> try this out for yourself.<br />
<br />
1/2 cup flour<br />
2 eggs<br />
1/4 cup panko bread crumbs<br />
1 cup Italian seasoned bread crumbs<br />
<br />
10 sticks of string cheese<br />
Vegetable Oil <br />
<br />
1. Preheat a large pan filled with about 1/2 inch to 1 inch of oil. Heat over medium low.<br />
2. Place flour in one bowl, eggs beaten in a second, and both kinds of bread crumbs mixed in a third.<br />
3. Roll the cheese sticks in flour until covered.<br />
4. Dip cheese sticks in beaten egg, cover completely.<br />
5. Dip cheese sticks in breadcrumbs, and roll to cover completely.<br />
6. Repeat steps 4 and 5.<br />
7. Place the mozzarella sticks (a few at a time) in preheated oil, and fry until crispy and browned, about 2 minutes on each side. <br />
8. Repeat with remaining mozzarella sticks.<br />
9. Keep mozzarella sticks warm in an oven set at 200 degrees, or microwave for 30 seconds to warm.<br />
10. Enjoy plain, or dipped in ranch or marinara sauce. Yum!<br />

4 chicken breasts<br />
1/2 cup bbq sauce<br />
1/2 cup teriyaki sauce<br />
1/2 cup water<br />
12 oz can pineapple<br />

1. Put chicken breasts, bbq sauce, teriyaki, water and pineapple into the crock pot.<br />
2. Cook on low for about 5-6 hours or on high for about 3, until chicken is cooked thoroughly and shreddable.<br />
3. Shred chicken and return to the crock pot while you cook the rice.<br />
4. Cook rice according to package directions in a pot, or with a rice cooker.<br />
5. Serve rice topped with chicken mixture and lots of sauce.<br />

The chocolate cookie is so easy to make but once you take a bite and get a taste of the caramel middle you'll never want to turn back. So instead we decided upon these cookies, rolo cookies, except not with rolos in the center. Instead the center is a delicious peppermint or mint truffle kiss. And for me, mint is the perfect Christmas flavor.<br />

The recipe I am going to share today, is actually <a href="http://likemother-likedaughter-food.blogspot.com/2010/02/taco-soup.html" target="_blank">one of the first recipes</a> I ever posted on this blog. Back in the day when the recipe was only<b> </b>read by mother and I. But back then I didn't take pictures, and this is such a <i>simple</i> and<b> delicious</b> recipe that I have to share it again.<br />

<b><u>Taco Soup</u></b><br />
1 lb ground beef<br />
one can of corn<br />
one can of beans (black or pinto)<br />
<br />
1 cup salsa<br />
1 14 oz can stewed tomatoes(or tomato sauce)<br />

tortilla chips<br />
toppings (sour cream, shredded cheese, cilantro, guacamole, etc.)<br />

1. Combine ground beef, corn, beans, taco seasoning, salsa and tomatoes in a crock pot.<br />
2. Stir together.<br />
3. Cook on low for about 6 hours, or on high for 3.<br />
4. Top with desired toppings and tortilla chips.<br />

</div><div class="" style="clear: both; text-align: center;">We went to Nate's aunt's house (on his dad's side) for Thanksgiving dinner this year. Although our parents live on opposite sides of the country (California and Virginia) we are not lacking in the extended family department here in Utah. We actually both have the majority of our aunts and uncles in the area. So, although we were unfortunately not able to make it to Virginia for Thanksgiving (as was previously planned) because of lack of funds (you know paying for a down payment really emptied our bank accounts) we had plenty of options. And since we are going to my parents for Christmas, I thought it would be best if Thanksgiving was spent with some sort of family from Nate's side.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">So, we went up to Nate's aunt's house in Centerville, and even took the pup with us too. As there would be 4 other large dogs there for him to play with. Unfortunately he got into a small brawl with another dog over a toy, but luckily no major damage was done.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="" style="clear: both; text-align: center;">Anyway, for Thanksgiving dinner we were asked to bring green bean casserole. And as there would be about 20 people (and obviously not accounting all of the other side dishes that would be available for consumption) I decided to make 2 casserole dishes full of the creamy green bean mixture. Unfortunately only about 2/3 of one dish was eaten, but lucky for us that meant we could have leftovers for a week (hah!). But, luckily for you I'm going to give you the halfed version of what I made.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;"><u><b>Green Bean Casserole</b></u> </div><div class="separator" style="clear: both; text-align: center;">2 cans cream of mushroom soup</div><div class="separator" style="clear: both; text-align: center;">1 cup of milk</div><div class="separator" style="clear: both; text-align: center;">2 TBS soy sauce</div><div class="separator" style="clear: both; text-align: center;">1/4 tsp ground pepper</div><div class="separator" style="clear: both; text-align: center;">5 cans cut green beans (or 10 cups)</div><div class="separator" style="clear: both; text-align: center;">3 cups french fried onions</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">1.Pre-heat oven to 350 degrees.</div><div class="separator" style="clear: both; text-align: center;">2. In a medium bowl combine mushroom soup, milk, soy sauce, pepper, green beans and 1 1/2 cups french fried onions.</div><div class="separator" style="clear: both; text-align: center;">3. Put casserole mixture in a 9x13 pan.</div><div class="separator" style="clear: both; text-align: center;">4. One summer his family went to North Carolina to stay at a beach house for a week and they had a seafood fest. There is an ongoing debate on how much money they spent on said seafood fest, but they know it was <b>at least</b> 150 dollars, maybe even 250. Anyway, the reason I am giving you this information is because when Nate used to go home for breaks his family would have him make coconut shrimp for them. Last Christmas when we were visiting his family he made this dish for them, and unfortunately because I don't like shrimp, or really any seafood in general, I didn't eat any. But it looked pretty amazing. So, recently I told Nate that we needed to try coconut crusted chicken.<br />

And finally this last week we made this chicken. And it was delicious. Especially with the orange marmalade sauce we made for a dip. We decided to bake the chicken, but for even more crunch you could also pan fry the chicken in a little oil.<br />
<br />
<br />
<b><u>Coconut Crusted Chicken Strips</u></b><br />
1 lb chicken (approx 2 breast)<br />
1/4 cup flour<br />
1/3 cup sweetened coconut flakes<br />
3 graham cracker sheets<br />
Juice from 1/2 orange<br />
2 eggs <br />
<br />
<br />
<br />
1. Preheat oven to 375 degrees.<br />
2. Beat egg with orange juice in a small bowl.<br />
3. Using a food processor, process 2 of the graham crackers into fine crumbs.<br />
4. Crumble the third graham cracker using your hands.<br />
5. Combine graham cracker crumbs and coconut in a small bowl.<br />
6. Cut chicken breasts into strips.<br />
7. Dry chicken pieces using paper towels.<br />
8. Cover chicken pieces in flour.<br />
9. Dip chicken in egg mixture<br />
10. Dip chicken in coconut/graham mixture and cover.<br />
11. Spray a cookie sheet with non stick spray, or grease with butter.<br />
12. Bake chicken about 15 minutes, (until internal temperature reaches 165 degrees)<br />
13. Enjoy chicken dipped in or topped with the orange marmalade sauce.<br />

1/3 cup marmalade<br />
Juice from 1/2 orange <br />

2 tsp soy sauce<br />

1. In a small sauce pan combine marmalade , orange juice and soy sauce.<br />
2. Heat over medium low heat for a few minutes, until sauce reaches desired thickness.<br />

Anyway, I think all of our boxes are unpacked, or at least mostly unpacked (we have maybe 2 or 3 that have only been partially unpacked). Yet even with 99% of our things in their proper place there are a couple of very important things that seem to have gone missing. Our measuring cups and spoons. Of course. And I swear to you that they are not in the bottoms of any of these partially unpacked boxes (believe me, I've checked) and so it appears they have vanished into thin air. It must be magic. Well, as you know, with cooking, and especially baking its fairly important to know the proper measurements of every ingredient in a recipe. Especially when you have a cooking blog, and want to provide your readers with the utmost correct recipes possible for them. Fortunately, we somehow managed to have our 1/3 measuring cup, and our 1 TBS measuring spoon. And we also have our liquid measuring cups, so I've used those for bigger measurements as well (Is that bad?!)<br />

So the point of my ramblings are, that I used a 1 TBS spoon to figure out how much approximately 1/2, 1 1/2 and 2 tsp are. So, hopefully I did those right. All I really know is that these muffins turned out amazing. 1 1/2 cups white sugar<br />
1/4 cup brown sugar<br />
1/4 cup oil<br />
4 eggs<br />
1 3/4 cup canned pumpkin<br />
1/2 cup water<br />
3 cups flour<br />
1 1/2 tsp baking powder<br />
1 tsp baking soda<br />
20 cloves, ground (or 1 tsp)<br />
1 1/2 tsp cinnamon<br />
1/2 tsp salt<br />
2 tsp allspice<br />
10 oz chocolate chips<br />

1. Preheat oven to 375 degrees.<br />
2. Mix sugars, oil, and eggs in a large mixing bowl.<br />
3. Stir in pumpkin and water.<br />
4. In a separate mixing bowl combine flour, baking powder, baking soda, salt, and spices.<br />
5. Add dry mixture to wet mixture, while stirring until completely mixed.<br />
6. Stir in chocolate chips.<br />
7. Grease muffin pan with cooking spray or use muffin liners.<br />
8. Fill muffin cups about 2/3 of the way with batter.<br />
9. Bake in preheated oven for 20 minutes.<br />

When we moved to California I knew I wanted to be in track again, but one of my friends from church was a pole vaulter and so I decided to try it out and never went back to actual running. I pole vaulted all four years of high school, and got a PR (personal record) of 8'9</li>

<li>I absolutely love cilantro. For example, students at school were giving presentations on different countries. One was on Mexico, they had chips and salsa to sample, the had the cilantro and onions on the side to add to your own salsa. I added probably a tsp (or more) of cilantro onto my 2 chips.</li>
<li>I studied <a href="http://aim-azing.blogspot.com/2009/06/linguist.html" target="_blank">Linguistics</a> <a href="http://blahblahberrett.blogspot.com/2011/01/official.html" target="_blank">in college</a>, at Brigham Young University. I also got two minors, one in German and another in TESOL (Teaching English to Speakers of Other Languages). I know teach ESL to adult students 20 hours a week.</li>
<li>I seriously love sweets (as you've probably noticed on the blog). After I finish eating dinner, I have to end my meal with something sweet. Cookies, fruit snacks, cake, candy, etc.</li>

But when I do use it, this is one of my favorite recipes to use it for. Plus, this recipe calls for caramelized onions, which I could pop into my mouth plain, like real pieces of caramel. So, that's a total plus, right?<br />

So when reducing balsamic vinegar, or maybe balsamic vinegar is always like this, it sends its aroma throughout the house. The smell is so strong, that if you put your head over the pot and smell directly, you might end up having a cough attack as the vinegar literally attacks your nose. But, it tastes good, so its alright. Just don't breathe the <i>fumes</i> in directly.<br />

We made this recipe once before, a while back, but made the mistake of cutting our meat pre-grilling it. It was still pretty good, but this time it was much better. Because before the meat was a little dry and tough, and this time it was moist and succulent and delicious.<br />

2/3 cup balsamic vinegar<br />
1 onion, sliced<br />
1 TBS olive oil<br />
1 tsp salt <br />
1 lb steak (flank, if you have it) **<br />
Worcestershire sauce <br />
Lemon pepper dressing<br />
6 small <a href="http://likemother-likedaughter-food.blogspot.com/2011/10/pita-bread.html" target="_blank">pitas </a>***<br />

**Ours was 1 lb, but cut into thirds <br />
***We had it this time on pitas, but the meat and onions taste good by themselves as well.<br />
<br />
1. Preheat charcoal, gas or electric grill.<br />
2. Drizzle Worcestershire sauce onto steak pieces, and rub in.<br />
3. Marinade steak pieces in lemon pepper dressing for 15-20 minutes<br />
4. In a small sauce pan, bring balsamic vinegar to a boil.<br />
5. Reduce heat to medium low and simmer until vinegar is reduced to about 1/4 cup, this will take about 5 minutes.<br />
6. Heat olive oil in a large skillet over medium high heat.<br />
7. Add onions to hot oil, and sprinkle with salt.<br />
8. Saute onions, stirring occasionally until golden brown, or about 22 minutes.<br />
9. Grill steak about 5-6 minutes on each side, or until it reaches desired doneness.****<br />
10. When steak is done, cut into thin strips (about 1/4 inch.<br />
11. Place 3-4 strips of meat onto one pita, top with onions and drizzle with vinegar sauce.<br />
12. Enjoy! <br />

****Measure how done the steak is with a thermometer, <a href="http://likemother-likedaughter-food.blogspot.com/2011/08/our-first-giveaway.html" target="_blank">here</a> are some tips on the correct temperatures for meat. My recommendation is 140 for this steak, or medium done.<br />

1. Heat olive oil in a large saute pan over medium heat.<br />
2. Add garlic and ground red pepper to olive oil and heat 1 to 2 minutes.<br />
3. Add ground beef to pan and brown.<br />
4. Add diced and crushed tomatoes, tomato sauce, salt, basil, oregano and thyme to ground beef.<br />
5. Bring to a simmer.<br />
6. Simmer for 15-20 minutes.<br />
7. Preheat oven to 350 degrees.<br />
8. Bring a large pot of water to boil.<br />
9. Add manicotti noodles and cook for about 5 minutes, until al dente.<br />
10. Meanwhile in a large bowl combine ricotta, 1/2 cup parmesan, 1 cup mozzarella (4 oz), eggs, spinach, salt, pepper, parsley, and basil.<br />
11. When noodles are cooked, allow them to cool for about 5 minutes.<br />
12. Spread about 2 cups of sauce into the bottom of a 9x13 inch baking dish.<br />
13. Completely fill noodles with cheese mixture.<br />
14. Place noodles into the sauced pan, however you think they fit best.<br />
15. Cover noodles with the remainder of the sauce.<br />
16. Cover pan with foil and bake about 40 minutes in preheated oven.<br />
17. Remove foil and sprinkle manicotti with remaining 1/2 cup of parmesan and 1 cup of mozzarella.<br />
18. Bake an additional 8-10 minutes until cheese is golden brown and bubbly.<br />
19. Remove and allow to cool for about 10 minutes before serving.<br />

The steps of this dish do not have to be done in this exact order, you can prepare the cheese mixture first. You can also make this meatless, or you (of course) use store bought sauce, whatever you like.<br />

This was delicious and we decided to freeze about half of the pan, so hopefully in a month or so we'll have some delicious manicotti for dinner. Yum.<br />
